Coconut Banana Bread

  
Preheat oven to 350

Glass pan or 9×5 loaf pan

Ingredients:

  • 3-4 Bananas (I used some I had frozen a couple months ago, thaw them before use)
  • 2 cups Coconut flour
  • 1/4 cup Coconut oil 
  • 3/4 cup coconut sugar
  • 1 tsp baking soda 
  • 1/4 teaspoon pink sea salt 
  • 1/2 stick butter
  • 2 eggs
  • Chia and hemp seeds (couple tablespoons of each)

Optional ingredients 

  • 1-2 apples 
  • 1 cup cashews

Soak cahsews for 30mins-1hr or rinse them then blend into butter    

Cut Apple into slices 

     (Both for toppings) 

In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

Cook for 40mins-1hr (mine only took 40)

Check by inserting toothpick in middle of it comes out clean it’s done 🙂

   
 

Make a plate top with cashew butter and apples maybe even some raw honey if you have it and sprinkle some cinnamon on top
