Chicken salad 

feeds 4

  • 4 avocados 
  • 3lbs chicken 
  • 1 bunch organic purple/red kale 
  • 1 head organic red lettuce 
  • 1 head organic green lettuce 
  • 4 grated organic carrots  
  • 1 lemon
  • 1 bunch cilantro
  • 2 cucumbers peeled
  • 2 organic bell peppers 
  • 2 organic tomatoes
  • Fresh grated pepperjack cheese
  • Hemp oil
  • Hemp seeds 
  • Chia seeds 

Dressing

  • 1/2 cup olive oil 
  • 1/4 cup hemp oil 
  • 1/3 cup organic apple cider vinegar 
  • 1 cup cilantro 
  • 2 T raw honey
  • 1/2 lemon 

  

  • Wash and cut veggies 
  • Coat kale in hemp oil then squeeze lemon on it let sit 
  • Mix together all the other lettuce and veggies
  • Put kale mix on top of it all add chia seeds and hemp seeds 
  • Return to fridge to chill 

  

  • Chop up 1 cup cilantro including stems ( the rest can be thrown in salad )
  • Add dressing ingredients together  
  • Mix well
  • Let sit ( do not put in fridge)

  

  • Spice and cook chicken
  • Add to salad 
  • Add cheese and seeds
